OK, so my most favorite meal EVER is my Veggie Lasagna!!! I seriously LOVE this dinner, and the best part about it is that it is SO healthy!
Ingredient:
1 squash
1 zucchini
1/2 bag of baby spin age
1/2 bunch of flat leaf parsley
1 white onion
3 cloves of garlic
1 package of Italian Sausage (thomasville is the best), also, you can sometimes buy it already ground up, but most of the time you have to buy the sausage link, and then you have to cut them open, and squeeze the meat out.
Dried oregano, parsley, or any other Italian herbs
1 Tub of Ricotta Cheese (low fat)
1 thing of Mozzarella cheese (low fat)
2 cans of petite diced tomatoes
1 package of lasagna noodles
salt and pepper
olive oil
one egg
I know that seems like a lot of ingredients, but I promise that you need ALL of them! Ok
1. Pour about 3 tablespoons of olive oil in a large pan. Dice up your onion, and let simmer for about 2 mins, then mince your garlic and put that in. Let them get good and soft. Then put your sausage in. Let the meat cook till done. Puree one can of tomato's, and then put the other one in straight.
2. Add chopped up flat leaf parsley, and dried oregano (about 1 1/2 tablespoon). Add salt and pepper. Let this simmer for about 2 hours. Stir every once in a while.
3. Put tub of Ricotta Cheese in bowl, then add dried herbs, and one egg, and salt and pepper.
4. Get pot of hot water, and put the noodles in. Don't get them too soft, take them out before you think they are done. Drain.
5. Grate your cheese.
6. Slice the squash, and zucinni, and spinage.
7. Get a pan out, and spray with pam, then line the bottom with the noodles. Spread the ricotta cheese mixture, then put the sausage sauce over the top. Sprinkle the cheese. Layer more noodles, then the ricotta cheese, then spread the squash, zucinni, and spinage. Put the rest of the sauce over the veggies, and then finish off with the cheese!!!
8. Bake in the over at 370 for about 45 mins!

Ooh, that looks yummy. I've yet to work up the guts to make lasagna from scratch. It just seems so intimidating. I'm very impressed.
That looks amazing! I love homemade lasagne, and thought I had a pretty good recipe, but I am tryng this one next time. Thanks!
